STEAK CROSTINI

  • 8 oz Cream cheese

  • 4 oz Sour Cream

  • 4 oz Blue cheese, crumbled

  • 2 small or 1 large New York strip steak

  • salt

  • pepper

  • garlic

  • 1 French baguette

  • butter

Season steak to taste with salt, pepper and garlic. Sear steak in lightly greased pan. Turn over frequently to cook through and get a nice sear. Cook to desired doneness. Just before finishing, add a pat of butter to each.

While the steak is resting, mix cream cheese, sour cream, and blue cheese. Cut the baguette into half-inch slices. Toast in oven until golden brown. Smear each slice with cream cheese mixture.

Slice steak and ad a slice to each crostini. Optional: Drizzle with balsamic reduction.

EASY MEATBALLS (I love this recipe.)

  • 1.5 lbs ground beef

  • 1/2 cup bread crumbs

  • salt

  • garlic

  • 1 egg

  • 2 cups of ketchup

  • hot sauce

  • grape jelly

Combine ground beef, breadcrumbs, salt, garlic and egg. Form meatballs and cook in the oven until done.

While they cook, simmer the ketchup in a saucepan. Add grape jelly and stir to melt the jelly into the ketchup. Add enough to turn the mixture a deep purple. Add hot sauce to taste.

Combine the meatballs with the sauce. Serve with toothpicks for an appetizer, with rice for a meal!
